When we visited New York City a few years ago, we were pleasantly surprised to discover that all the delis and bagel cafes had homemade tofu cream cheese. It’s a basic tofu puree that doesn’t taste precisely like cream cheese, but it does an excellent job of imitating the chilly feeling and creamy texture of the real thing. It’s also about a million times healthier.
We were hooked when we tried it on a bagel sandwich, which became our morning staple for the remainder of the trip.
Most other recipes for tofu cream cheese use silken tofu, but that extra hard tofu works much better at mimicking the rich and creamy consistency of actual cream cheese. It pairs better with sour cream than cream cheese.
Again, the flavour of this recipe will not fool your taste senses into believing you’re eating real cream cheese, but the texture and look are relatively accurate. It reminds me of whipped cream cheese, my favourite sort, before I gave up dairy.
Ricotta and Honey Breakfast Bagel
Now and again, I desire a sweet breakfast with some substance. Just because my life is free of gluten and dairy does not mean I can’t have a breakfast that is *almost* as nice as a glutinous bagel with genuine dairy cream cheese on top.
This recipe was inspired by a dish I watched Giada DeLaurentiis make on one of her shows many years ago, where she covered some incredible-looking bread with genuine ricotta, honey, and berries. Her version contains additional sugar, and her other variants, while visually appealing, are not suitable for my diet.
So, one lovely day, my brain recalled an episode of her programme from about ten years ago, and I discovered Kite Hill almond milk ricotta cheese, and I prepared this deliciousness. It does not require more sugar than the drizzle of delicious raw honey. This is a major treat, and while I wouldn’t advocate having it every day, you’ll be grateful for adding it to your rotation.
GREEK YOGURT FRUIT & BAGEL DIP
I can’t get enough Greek yoghurt. It’s my go-to breakfast, a quick nibble on the road, and a late-night pleasure when I get home from the hospital. Even when the fridge is nearly empty, I always have a supply of yoghurt cups in various flavours. I adore how Greek yoghurt has healthy protein and is so fulfilling! I include it in as many dishes as I can.
Given my fondness for yoghurt, it’s apt that my most famous dish is Greek Yoghurt Apple Dip. I modified the dip for this recipe to create a Greek yoghurt fruit dip and bagel spread. I selected the pomegranate flavour since it is so distinctive that it piqued my interest at the grocery store.
The Greek yoghurt I used had genuine crushed pomegranate seeds. I enjoy the added crunch; it adds to the texture of the yoghurt. So refreshing! The option to utilise any flavour of Greek yoghurt allows you to change things up depending on your mood.
MASHED SWEET POTATOES

I enjoy two things: sweet potato rounds and Trader Joe’s.
I prepare sweet potato rounds at least once a week. They taste similar to sweet potato fries, but they’re much easier to cook. Please try it.
Although I wish I went to Trader Joe’s as frequently as I prepare sweet potatoes, I only go once a month now that I’ve relocated further away from my previous TJ location. Now, whenever I go, I spend extra time perusing each aisle for new culinary delights to taste.
This Everything But The Bagel Seasoning is a Trader Joe’s item I’ve wanted to test for quite some time. I like anything bagels, so the notion of a spice blend that may enhance the flavour of my favourite dishes appealed to me! I’ve seen the seasoning used on avocado toast, poultry, and eggs.
I enjoy experimenting with different ways to season sweet potatoes, such as Curry Baked Sweet Potato Fries, Savoury Sweet Potato Toast, and Maple Roasted Sweet Potatoes. So, I decided to try the seasoning on my sweet potato rounds, which worked well!
I like not to peel the potatoes before baking since I enjoy the skins’ flavour (peeling potatoes is also one of my least favourite tasks).
The trick to creating perfect sweet potato rounds is to trim each round to an equal width. This helps them bake evenly!

If I go to a bagel store, I get a smoked salmon cream cheese bagel. It’s my go-to. But I’ve been polishing my at-home version, and it’s pretty unbeatable. This Smoked Salmon Bagel has it all, plus it’s easy to customise with your favourite bagel ingredients. Ready in under ten minutes!

You’ll start with a handmade bagel (believe us, it’s easier than you think). Then, you cover it with cream cheese, lemon juice, dill mixture, a substantial quantity of smoked salmon, and garnishes like avocado, cucumber, and tomato.
However, you may customise this recipe by adding your favourite sandwich content.
This smoked salmon bagel is light and fresh and packs easily for picnics. If you invite folks around for lunch or host an afternoon tea, this smoked salmon bagel seems more sumptuous than an average ham sandwich and requires little work.
Egg salad
Egg salad is hardly novel in the culinary world. However, most premade egg salad sandwiches purchased at the grocery store or in some restaurants are bland: too much mayonnaise, little flavour. Yes, egg salad may have a nuanced and sophisticated flavour! When I was studying in Toronto, E and I used to go for lunch at the What a Bagel franchise, which featured fresh and plump bagels with various toppings. My favourite was their egg salad: the perfect texture (I despise mushy, reduced-to-a-bland-paste egg salad!), and the spice was spot on.
Back in Quebec, I attempted a variety of component combinations to achieve the same enjoyment as my egg salad bagels. All the ingredients are cupboard or refrigerator essentials you should already have; it just takes a few minutes to make. Toast a sesame multigrain bagel (or two pieces of pumpernickel bread), wash a few lettuce leaves, and pour a thick layer of egg salad – and voilà! You have your nutritious, homemade sandwich ready to eat in less time than it would take to get to the grocery shop.
Hard-boiled eggs are best stored in the refrigerator. They’re easy to prepare beforehand (see the foolproof procedure below). Once cooked, keep them in their shells and refrigerate in an airtight container. They will last approximately a week, and we await your request.
Bagel for babies and children
Like any bread, Bagel is high in carbs, an essential source of nutritional energy and necessary for growth and development. I understand that many people eat low-carb diets for a variety of reasons, but please do not restrict your child’s carbs.
For the finest bagels for babies and toddlers, go for whole grains for more fibre and protein. Choose one with the least amount of salt and added sugar.
Mini bagels are ideal since they are more straightforward to handle and consume.
Check the ingredient list for honey, as it might cause newborn botulism.
Although the texture of bagels makes it difficult for newborns to ingest much of them, if any, they will be beneficial for developing jaw strength and oral motor skills.
